  3. Add a tiny pinch of salt and black pepper if using, then top with the remaining bread slices, butter-side up.
  4. Heat a skillet or griddle over medium-low heat.
  5. Cook the sandwiches for 3 to 5 minutes on the first side until golden brown.
  6. Flip and cook another 3 to 5 minutes until the second side is crisp and the cheese is fully melted.
  7. Rest for 1 minute, slice, and serve.
